Broccoli-raisin salad

Delight in the perfect fusion of fresh broccoli florets and sweet raisins in a vibrant salad bursting with tangy flavors and crunchy textures.

Ingredients:

  • 6 cups broccoli florets
  • 200g 2% Greek Yogurt
  • 1/4 cup olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon cumin
  • 2 tablespoons honey mustard
  • 2 tablespoons lemon juice
  • 1/4 teaspoon black pepper
  • 3/4 cup raisins
  • 1/2 cup chopped walnuts
  • 110g feta cheese

Instructions:

  1. Add broccoli to a large pot filled with 3 cups of water and salt. Bring it to a boil and cook for 3 minutes. Remove from heat and drain the water. Rinse the broccoli with cold water and drain again to halt the cooking process. Place the broccoli in a big bowl and keep it aside.
  2. Combine Greek yogurt, olive oil, salt, cumin, honey mustard, lemon juice, and black pepper in a mixing bowl.
  3. Mix in the raisins, walnuts, and feta cheese with the broccoli in the bowl. Pour the dressing over the broccoli mixture and mix well to ensure everything is coated. Serve the dish chilled.
