Broad bean&cauliflower salad with cumin yogurt

Ingredients:
- The Salad
- 1/2 cup puy lentils
- 1 bay leaf
- 2 cloves garlic
- 1/2 large cauliflower, broken into small florets
- 100g broad beans, fresh or frozen
- 1 handful black olives, halved and pitted
- 1/2 preserved lemon, finely chopped
- 1 teaspoon cumin seeds, toasted and lightly ground
- 1 handful coriander
- 1 handful sunflower seeds, toasted
- Cumin Yogurt
- 100g greek set yogurt
- 1 tablespoon tahini
- 1 clove garlic, minced
- pinch salt
- 1 teaspoon cumin seeds, toasted
Instructions:
- Place lentils in a medium saucepan with bay leaves and garlic, then add plenty of cold water to cover them. Heat until boiling without a lid, then reduce heat and simmer until tender but still slightly firm, which should take around 15-20 minutes.
- Bring a pan with a steamer attachment to a boil. Start by cooking the broad beans for just a few minutes until their skins can be easily removed. Once cooked, take the beans out of the steamer and rinse them under cold water to stop the cooking process. Optionally, you can shell the beans at this point if desired.
- Following that, steam the cauliflower until the florets begin to soften slightly but still have a crisp texture, which usually takes a minute or two. Place the cooked cauliflower in a large bowl and, while it is still warm, add lemon juice, a generous amount of olive oil, salt, and pepper. Mix everything well before incorporating olives, broad beans, cumin, and coriander. Gently combine all the ingredients to blend the flavors.
- Now prepare the cumin yogurt by simply stirring together all the listed ingredients. Taste the mixture and adjust the seasonings to your preference.
- Split the salad evenly between two bowls and drizzle each portion with the cumin yogurt, then sprinkle with seeds before serving.
