Brilliant autumn salad

Ingredients:
- 340g whole fresh beets (weight with greens removed but not trimmed)
- 230g whole carrots (4 or 5 medium ones)
- Juice of one large lime
- 1 tablespoon red wine vinegar
- 1 teaspoon finely chopped fresh mint leaves
- 2 tablespoons tasty olive oil
- Salt
- Pepper
Instructions:
- Clean the beets thoroughly and bake them wrapped in foil in an oven preheated to 180 °Cor approximately one hour. Flip the packets over halfway through the cooking time. Test the beets at the 50-minute mark; they should be easy to pierce with a knife, but still have a slight firmness to them. If you have any beets larger than a tennis ball, consider cutting them in half before baking. Once done, take them out of the oven, unwrap the foil packets, and allow the beets to cool down.
- Wash and remove the outer layer of skin from the carrots. Place them whole on a baking sheet lightly coated with oil, rotating them every 15 minutes while baking at 180 °C. Cooking time usually ranges from 30 to 45 minutes, depending on the size of the carrots. When a knife can effortlessly go through the thicker parts of the carrots, yet they remain slightly crisp, take them out of the oven and let them cool.
- Discard the stems of the carrots, then shred them using a food processor. Transfer the shredded carrots into the serving bowl for the salad.
- Peel and grate the beets using a food processor. Keep the grated beets aside.
- Combine lime juice, vinegar, a dash of salt, and mint with the shredded carrots, tossing gently. Drizzle in the oil and toss once more.
- Just before serving, mix in the grated beets and toss everything together. Taste and adjust the seasoning with salt as needed. For added flavor, sprinkle freshly ground pepper if desired.
