Bresaola surprise rolls
Indulge in these savory Bresaola surprise rolls bursting with flavors of cured beef, fresh herbs, and tangy cheeses. Perfect for any occasion!
Ingredients:
- 20 slices of bresaola
- 1 teaspoon mustard
- 2 cups fresh whole milk ricotta
- 1/2 cup Gorgonzola
- 1/4 cup pistachios – roasted, pealed and chopped
- 10 radishes julienned
- 10 sprigs of chives, chopped finely
- Extra Virgin Olive Oil
- Salt
- Pepper
- 4 Sicilian oranges
- Salad or arugula to serve
- 15 Cherry tomatoes
- Vinaigrette sauce
Instructions:
- Combine the ricotta with 2 tablespoons of Extra Virgin Olive Oil in a bowl, using a whisk or fork, until it becomes very smooth. Break the Gorgonzola into small pieces and add them to the ricotta. Season with salt and pepper according to your taste preferences, and stir well. Mix in the chives, julienned radishes, and chopped pistachios.
- Next, peel the pear, discard the core, and cut it into thin strips.
- To make the bresaola surprise rolls:
- Place the Bresaola slices on a cutting board and lightly brush them with a small amount of mustard. Spoon 2 to 3 teaspoons of the ricotta mixture onto one end of each slice, then top with some julienned pear before rolling them up gently.
- For serving:

- Arrange some orange slices on a plate. Place 5 Bresaola Surprise rolls on top. Garnish with arugula or salad and cherry tomatoes. Drizzle Extra Virgin Olive Oil over the Bresaola Surprise Rolls and dress the salad with a basic vinaigrette sauce.
