Breakfast salad with spinach & egg

Delicious breakfast salad featuring fresh spinach leaves and perfectly poached egg. Start your day with a burst of vibrant flavors and wholesome greens.

Ingredients:

  • 1 corn tortilla
  • 3 cups spinach
  • 1 tablespoon vinaigrette
  • 2 tablespoons shredded Cheddar cheese
  • 1 hard-boiled egg, sliced
  • ¼ avocado, diced

Instructions:

  1. Heat the oven to 400°F. Put the tortilla on a small baking sheet and bake, turning it over once, until it becomes crisp, which is approximately 8 minutes.
  2. While waiting, mix spinach with vinaigrette. Add cheese, egg, and avocado on top. Break the tortilla into small pieces and scatter it over the salad.
