Breakfast salad with a pizza crust waffle

Ingredients:
- 60g pizza dough (about the size of a golf ball)
- 1 teaspoon chopped herbs (rosemary, thyme, oregano)
- 1 large egg
- 30g salad greens
- 60g cherry tomatoes
- Olive oil
- Salt and freshly ground pepper, to taste
Instructions:
- Flatten the pizza dough until it reaches a similar size as your waffle iron. Brush some olive oil on both sides, lay it on the iron, and sprinkle chopped herbs on top. Move it to the waffle iron and cook for 2 to 3 minutes, until it turns golden and crispy.
- Heat a small saucepan of water until it starts to simmer rapidly, then carefully poach the egg. (Refer to the method for poaching an egg.)
- Transfer the cooked waffle onto a plate and layer the greens, tomatoes, and poached egg on top. Add salt and pepper to taste.
