Brassica salad

Ingredients:

  • ½ teaspoon grated orange zest
  • 2 tablespoons orange juice
  • 2 tablespoons champagne vinegar
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon honey
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper
  • 450g beets and/or carrots, peeled
  • ¼ cup crumbled goat cheese
  • ¼ cup chopped toasted pistachios
  • ¼ cup chopped fresh mint

Instructions:

  1. Combine orange zest, orange juice, vinegar, oil, honey, salt and pepper in a large bowl.
  2. Peel vegetables thinly using a vegetable peeler to create ribbons. Place them in the bowl with the dressing and mix well. Allow to sit for 10 minutes.
  3. Place the vegetables on a serving platter and pour any remaining dressing over them. Sprinkle with goat cheese, pistachios, and mint.
