Brassica salad

Ingredients:
- ½ teaspoon grated orange zest
- 2 tablespoons orange juice
- 2 tablespoons champagne vinegar
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon honey
- ½ teaspoon salt
- ¼ teaspoon ground pepper
- 450g beets and/or carrots, peeled
- ¼ cup crumbled goat cheese
- ¼ cup chopped toasted pistachios
- ¼ cup chopped fresh mint
Instructions:
- Combine orange zest, orange juice, vinegar, oil, honey, salt and pepper in a large bowl.
- Peel vegetables thinly using a vegetable peeler to create ribbons. Place them in the bowl with the dressing and mix well. Allow to sit for 10 minutes.
- Place the vegetables on a serving platter and pour any remaining dressing over them. Sprinkle with goat cheese, pistachios, and mint.
