Boulettes de sardines (sardine fishcakes)

Ingredients:
- 500g sardine fillets
- 1 medium tomato, grated (optional)
- 1 tbsp chopped parsley
- 1 tbsp chopped coriander
- 70g semolina or flour, for dusting
- 100ml oil, for frying
- salad, to serve (optional)
- 6 garlic cloves, roughly chopped
- 1 small red chilli, deseeded and roughly chopped
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp cayenne pepper
- 2 tbsp extra virgin olive oil
Instructions:
- Crush all the ingredients for the dersa into a coarse paste using a mortar and pestle.
- Dice the sardine fillets into small pieces and place them in a large bowl. Include the tomato, if preferred, herbs, the dersa, and ¼ tsp eachsea salt and black pepper, and combine thoroughly. The mixture will have a moist consistency.
- Form the mixture into small fish patties (approximately 50g each) and coat generously with semolina or flour. Warm the oil in a non-stick skillet over medium-high heat, then pan-fry the fish patties on both sides for about 3 minutes until they are golden brown. Serve two or three fish patties per individual along with a side salad, if desired.
