Bok choy salad

Ingredients:

  • 1 medium head bok choy, diced
  • 4 green onions, sliced
  • 1 (3-ounce) package ramen noodles
  • 1/2 cup slivered almonds, toasted
  • 2 tablespoons sesame seeds, toasted
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon tamari

Instructions:

  1. Mix bok choy and onions together and let it cool in the refrigerator.
  2. Crush the raw ramen noodles and mix them with the almonds and sesame seeds.
  3. Stir together the rest of the ingredients.
  4. Just before serving, mix the bok choy with the noodle mixture. Combine the oil, lemon juice, and tamari. Toss the salad with the dressing until evenly coated.
