Boiled potato salad

Ingredients:

  • 500 grams Potatoes
  • 1/2 Onion
  • 3-4 branches of Parsley
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice or Apple cider
  • 1 pinch Salt and Pepper

Instructions:

  1. Peel and cut the potatoes into large chunks, then transfer them to a pot.
  2. Fill the pot with enough water to cover the potatoes, then heat it on high until the water starts boiling.
  3. Allow the potatoes to boil for 20-30 minutes. To check if they are cooked, insert a fork into the largest potato and hold it downwards. If it easily slides off, the potato is done.
  4. Drain the potatoes and place them in a bowl. Slice the onion into half circles and add it to the potatoes.
  5. Drizzle olive oil and either vinegar or lemon juice over the potato mixture. Season with a teaspoon of salt and a pinch of pepper.
  6. Stir the ingredients together using a spoon.
