Blueberry and mango salad with tahini ginger dressing

Indulge in the zesty flavors of blueberry and mango salad, topped with a tantalizing tahini ginger dressing. A burst of fresh, vibrant taste!

Ingredients:

  • 1/2 cup 365 Everyday Value organic tahini
  • 1/2 cup organic brown rice syrup
  • 1/2 teaspoon 365 Everyday Value organic ground ginger
  • 8 -10 tablespoons water (purified / filtered)
  • 8 handfuls Whole Foods Market organic spring salad mix
  • 2 cups organic blueberries
  • 2 cups organic mango (peeled, cubed)
  • 1 cup Whole Foods Market organic pecans

Instructions:

  1. Make the dressing:  Combine all dressing ingredients in a small bowl and mix thoroughly until they are fully blended.  Customize the sweetness to your liking and adjust the amount of water to achieve your desired thickness.
  2. Place 2 handfuls of mixed spring salad on each plate and scatter ¼ of the blueberries, ¼ of the diced mango, and ¼ of the pecans on top of each salad.
  3. Pour the Tahini Ginger Dressing over the salads, making sure to distribute it evenly among the 4 plates.
