Blue cheese & spinach salad

Indulge in the rich flavors of tangy blue cheese paired with fresh spinach leaves in this vibrant and wholesome salad. Perfect blend of savory and earthy notes.

Ingredients:

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice (from 1 lemon)
  • 2 teaspoons honey
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon Dijon mustard
  • ½ teaspoon black pepper
  • ¼ teaspoon kosher salt
  • 4 cups mixed baby lettuces
  • 1 medium ripe Bosc pear, thinly sliced
  • ¼ cup crumbled Gorgonzola cheese
  • ¼ cup toasted walnuts, coarsely chopped
  • ¼ cup golden raisins

Instructions:

  1. Combine oil, lemon juice, honey, thyme, mustard, pepper and salt in a big bowl and mix well. Add lettuce and lightly mix. Garnish with pear slices, Gorgonzola cheese, walnuts and raisins. Serve right away.
