Blue cheese caesar salad

Ingredients:
- 6 slices white sandwich bread, cubed
- 3 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground pepper
- 1 cup blue cheese dressing (see directions)
- 1/4 cup grated parmesan cheese
- 2 anchovy fillets, finely chopped
- Juice of 1/2 lemon
- 2 teaspoons dijon mustard
- 3 romaine lettuce hearts, roughly chopped
- Crumbled blue cheese, for topping
Instructions:
- Mix the bread with the olive oil and add some salt and pepper. Use a large pan on medium-high heat. Put the bread in and cook while stirring occasionally until it turns golden on all sides, for approximately 7 minutes. Put it aside and let it cool down a bit.Beat together the dressing, parmesan cheese, anchovies, lemon juice, and mustard in a big bowl. Mix in the romaine lettuce and croutons; toss them gently until they are coated and then season with some pepper. Sprinkle some blue cheese on top.Blend together 1/2 cup of crumbled blue cheese, sour cream, buttermilk, a small smashed garlic clove, and white wine vinegar in a blender. Move the mixture to a bowl and mix in 1/4 cup more blue cheese, a couple of dashes of Worcestershire sauce and/or hot sauce, and chopped parsley. Season with salt and pepper. (The quantity is approximately 2 cups.)
