Blt salad
Delicious BLT salad recipe for a quick and satisfying meal packed with crispy bacon, juicy tomatoes, fresh lettuce, and zesty dressing. Perfect for lunch or a light dinner.
Ingredients:
- 8 thick-cut slices bacon
- 3 cups torn artisanal or sourdough bread (from 4 oz. bread)
- 1 tablespoon olive oil
- .50 teaspoon kosher salt, divided
- 4 large eggs
- 90g blue cheese, crumbled (about 3/4 cup)
- ¼ cup mayonnaise
- ¼ cup buttermilk
- .50 teaspoon freshly ground black pepper, plus more for serving
- 2 tablespoons chopped fresh chives, plus more for serving
- 1 5-oz. pkg. baby spinach
- 2 large tomatoes (about 1 lb. total), coarsely chopped
- Flaky sea salt, for serving
Instructions:
- Preheat your oven to 400°F and make sure to place the racks in the top and lower third positions. Cover a large rimmed baking sheet with aluminum foil. Lay out the bacon in a single layer on the baking sheet. On another large rimmed baking sheet, place the bread cubes, drizzle oil and sprinkle 1/4 teaspoon kosher salt, then mix well with the bread. Put the bacon on the top rack and the bread cubes on the lower rack in the oven. Bake the croutons until they turn golden brown, which should take around 10 to 12 minutes. Keep baking the bacon until it becomes crispy, which should take an additional 10 to 12 minutes. Once done, move the bacon to a plate lined with a towel.
- While the bacon and croutons are baking, fill a medium-sized pot with water and bring it to a boil. Gently place the eggs in the boiling water. Lower the heat to medium-low and let the eggs simmer for 9 minutes. After that, transfer the eggs to a bowl filled with ice water and let them sit for 5 to 10 minutes.
- In a food processor or blender, blend the cheese, mayonnaise, buttermilk, 1 tablespoon of water, pepper, and the remaining 1/4 teaspoon kosher salt until you get a smooth mixture, which should take about 45 seconds. Transfer the mixture to a bowl and stir in the chives.
- After peeling the eggs and cutting them in half lengthwise, chop the bacon into small pieces. Arrange the spinach on a serving platter. Then, layer the tomatoes, eggs, bacon, and croutons on top of the spinach. Sprinkle some flaky sea salt, pepper, and chives over the tomatoes and eggs. Serve with the blue cheese dressing.
