Blt pasta salad
This BLT pasta salad is a delicious twist on a classic favorite. Packed with crispy bacon, juicy tomatoes, and fresh lettuce, it's a flavor explosion!
Ingredients:
- 340g corkscrew-shaped pasta
- 1/2 cup milk
- 340g lean bacon
- 3 medium ripe tomatoes, cut into chunks
- 1 tablespoon chopped fresh thyme
- 1 clove garlic, minced
- Kosher salt and freshly ground pepper
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 4 tablespoons chopped chives or scallion greens
- 5 heads Bibb lettuce, quartered, or 5 cups chopped romaine hearts
Instructions:
- Boil the pasta in a large pot of salted water following the instructions on the package. After cooking, drain the pasta and mix it with milk in a large bowl; leave it aside.
- While the pasta is cooking, fry the bacon in a large pan over medium-high heat until it becomes crispy. Place the bacon on paper towels to remove excess oil. Keep only 3 tablespoons of bacon fat in the pan. Combine tomatoes, thyme, and garlic in the pan and heat them up; add salt and pepper to taste. Break the bacon into small pieces; save a 1/4 cup for decoration. Mix the rest of the bacon and tomato mixture with the pasta.
- Combine mayonnaise, sour cream, and 3 tablespoons of chives with the pasta until it's well blended. Season with salt and pepper. Add lettuce and mix it well. Decorate with the saved bacon and the remaining 1 tablespoon of chives. Serve the dish at room temperature.
