Blt pasta salad
Delicious BLT pasta salad recipe perfect for a quick lunch or side dish. Packed with crispy bacon, juicy tomatoes, and flavorful herbs.
Ingredients:
- 450g uncooked penne pasta
- 5 teaspoons kosher salt, divided
- ¼ cup mayonnaise
- 2 tablespoons fresh lemon juice (from 1 lemon)
- 1 tablespoon Dijon mustard
- ¾ teaspoon black pepper, divided
- 60g romaine leaves, chopped (about 3 cups)
- 1 pint grape tomatoes, halved
- 8 bacon slices, cooked and chopped
- 1 avocado, diced
Instructions:
- Prepare the pasta as per the instructions on the package, and include 4 teaspoons of salt in the boiling water. Once the pasta is ready, drain it and then rinse it with cold water. Set it aside.
- While the pasta is cooking, mix mayonnaise, lemon juice, mustard, 3/4 teaspoon of salt, and 1/2 teaspoon of pepper in a large bowl. Combine the pasta with the prepared dressing.
- Mix romaine lettuce, tomatoes, bacon, avocado, and the remaining 1/4 teaspoon of salt and pepper with the pasta. Ensure everything is combined well. Refrigerate for 20 to 30 minutes before serving.
