Blt meatball sliders

Ingredients:
- 1 tsp. pepper
- 1/2 tsp. crushed red pepper flakes
- 3/4 lb. ground pork
- 1/2 lb. lean ground beef (90% lean)
- 2/3 cup ranch dressing
- 18 dinner rolls, split
- 3 cups spring mix salad greens
- 3 plum tomatoes, sliced
- 1 lb. uncooked bacon strips
- 1 cup 2% milk
- 1 egg
- 1 cup dry bread crumbs
- 1 small onion, finely chopped
- 1 tsp. salt
Instructions:
- Add bacon to a food processor and blend until finely chopped. In a large mixing bowl, mix together milk, egg, breadcrumbs, onion, and spices. Crumble bacon, pork, and beef over the mixture and combine thoroughly. Form the mixture into meatballs about 2 inches in diameter. Spot them in a 15x10x1-inch baking dish without greasing it. Cook in the oven at 425°F for 30 to 35 minutes or until the internal temperature reaches 160°F. Spread ranch dressing on the rolls and assemble each one with salad greens, a slice of tomato, and a meatball; finish by adding the roll tops.
