Blackened chicken with chopped salad
Tantalize your taste buds with succulent blackened chicken atop a bed of fresh, crisp chopped salad. A burst of flavors in every bite!
Ingredients:
- 1 ½ tablespoons paprika
- 1 ½ teaspoons garlic powder, divided
- ¾ teaspoon ground pepper, divided
- ½ teaspoon salt plus a pinch, divided
- ½ teaspoon dried thyme
- ¼ teaspoon cayenne pepper
- 450g chicken cutlets
- 4 tablespoons grated Parmesan cheese, divided
- 2 tablespoons lemon juice
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons mayonnaise
- 8 cups chopped butter lettuce
- 1 cup cherry tomatoes, halved or quartered if large
Instructions:
- Heat up the grill until it reaches a medium-high temperature.
- In a medium bowl, mix together paprika, 1 teaspoon of garlic powder, 1/2 teaspoon of pepper and salt each, thyme, and cayenne. Add the chicken and stir until coated.
- Grease the grill rack with oil. Cook the chicken on the grill, turning it over once, until a meat thermometer reads 165°F when inserted into the thickest part, which should take roughly 6 minutes. Transfer the chicken to a clean cutting board. Allow it to sit for 5 minutes before slicing.
- While the chicken is grilling, combine 2 tablespoons of Parmesan, lemon juice, oil, and mayonnaise in a large bowl. Add the remaining 1/2 teaspoon of garlic powder, 1/4 teaspoon of pepper, and a pinch of salt. Mix well. Toss in the lettuce and tomatoes until coated. Place the chicken on top of the salad and sprinkle the remaining 2 tablespoons of Parmesan over it.
