Black & white bean salad with tomato and fresh mozzarella
Try this vibrant black & white bean salad bursting with flavors of juicy tomato and creamy fresh mozzarella. A delightful culinary experience in every bite!
Ingredients:
- 1 1/2 tablespoons white wine vinegar
- 1 1/2 tablespoons lemon juice
- 2 tablespoons Dijon mustard
- 1/2 teaspoon salt
- freshly ground black pepper
- 1 garlic clove, chopped
- 1/2 cup olive oil
- 1 430g can black beans, drained and rinsed
- 1 430g can white cannellini beans, drained and rinsed
- 4 green onions, chopped
- 3 large tomatoes, chopped
- 230g fresh mozzarella cheese, sliced into 1/2 inch squares
- 1/4 cup fresh basil, chopped
Instructions:
- Combine all vinaigrette ingredients except for olive oil in a food processor or electric mixer and blend until the mixture is smooth. Gradually pour in the olive oil while mixing until the vinaigrette becomes thick and well blended. Set the mixture aside.
- In a spacious bowl, toss together black and white beans. Drizzle half of the prepared vinaigrette over the beans and blend them gently. Let it sit and soak for half an hour.
- Incorporate onions, tomatoes, mozzarella, and basil into the bean mixture. Pour the rest of the dressing over the ingredients, and stir thoroughly. Season with salt and pepper according to your preference.
