Black bean with melon(s) and feta salad
Indulge in a delightful fusion of flavors with this zesty black bean salad featuring sweet melon chunks and tangy feta cheese. A refreshing taste sensation!
Ingredients:
- 2 cups seedless watermelon or cantaloupe, in small cubes or balls
- 2 cups English cucumber, cut into quarters lengthwise and then into 1/2-inch slices
- 2 1/2 cups cooked black beans
- 3/4 cup cubed feta cheese (approximately 1/4-inch cubes)
- 1/4 cup extra-virgin olive oil
- 1 teaspoon honey (see Tips, above)
- 1 tablespoon freshly squeezed lime juice, plus more for serving
- 1 large handful basil leaves, cut into ribbons (see Tips)
- Salt and freshly ground black pepper, to taste
Instructions:
- Combine the melon, cucumber, beans, and feta in a large bowl.
- Whisk together the olive oil, honey, and lime juice in a small bowl.
- Integrate the basil into the mixture, then pour the dressing over the salad. Season with salt and pepper to your preference. (Be cautious with the salt due to the feta's saltiness.) Mix gently to incorporate all ingredients.
- Enjoy the salad cold or at room temperature, and drizzle lime juice on top just before serving. If preparing ahead, you can refrigerate the assembled salad without the basil for up to a day; simply add the basil right before serving.
