Black bean with mango and chile powder salad

Ingredients:

  • 2 cups cubed mango, about 3 mangoes, preferably the Ataulfo variety (see Notes)
  • 2 1/2 cups cooked black beans
  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon freshly squeezed lime juice, plus more for serving
  • 1 teaspoon chile powder
  • 1 large handful fresh cilantro, stems removed, chopped (see Notes)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Combine the mango and beans in a bowl for serving.
  2. In a separate bowl, blend the olive oil, lime juice, and chile powder together.
  3. Mix in the cilantro with the mango and beans, then pour the dressing over the salad. Season with salt and pepper to your taste. Mix well.
  4. Enjoy the salad cold or at room temperature. You can prepare this salad ahead of time without the cilantro and store it in the fridge for the next day. Add the cilantro (or parsley) right before serving.
