Black bean salad with grilled pork cutlets

Ingredients:

  • 1 tablespoon lime juice
  • 1 tablespoon canola oil
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 3 thin center-cut boneless pork chops (9 oz. total)
  • 2 tablespoons olive oil or canola oil
  • 2 tablespoons orange juice
  • 2 tablespoons cider vinegar
  • ¾ teaspoon ground cumin
  • ¼ teaspoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • ¾ cup canned low-sodium black beans, rinsed
  • ½ cup cooked barley
  • ½ cup diced red bell pepper
  • ⅓ cup fresh corn kernels or frozen corn niblets, cooked according to package instructions and rinsed
  • 2 scallions, chopped
  • ¼ cup coarsely chopped fresh cilantro (optional)
  • Lime wedges for serving

Instructions:

  1. In order to marinade the pork: Mix together lime juice, 1 tablespoon of oil, garlic powder, 1/8 teaspoon of salt, and 1/8 teaspoon of pepper in a shallow glass container. Place the pork in the mixture, ensuring it is well coated. Allow it to marinate in the fridge for 15 to 20 minutes, flipping it at least once.
  2. While the pork is marinating, get the salad ready: Combine oil, orange juice, vinegar, cumin, oregano, salt, and pepper in a medium bowl. Keep 2 tablespoons of this mixture on the side. Add black beans, barley, bell pepper, corn, scallions, and cilantro (if preferred) into the remaining mixture; mix well to coat everything.
  3. Heat up the grill to medium-high. Grease the grill rack (refer to Tip section). Get rid of the marinade from the pork and grill it until fully cooked (there might be a slight pink color at the center), around 2 to 2 1/2 minutes per side.
  4. Place the salad on 2 separate plates and arrange a piece of grilled pork on top of each salad. (Store the extra pork for later use; check Associated Recipe for ideas.) Drizzle the reserved dressing over the pork.
