Black bean salad

Delicious black bean salad recipe with zesty flavors and fresh ingredients. Perfect balance of colors, textures, and seasonings in every bite.

Ingredients:

  • 16-ounce can black beans, rinsed, drained and dried
  • 1/2 red bell pepper, finely chopped
  • 1/2 yellow bell pepper, finely chopped
  • 1/2 cup steamed haricots verts, chopped into 1-inch lengths
  • Mustard Vinaigrette, recipe follows, mixed with cilantro
  • Thin slices of red onion
  • 1 teaspoon or so Dijon mustard
  • 4 tablespoons vegetable oil
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper

Instructions:

  1. Mix together beans, bell peppers, and haricots verts. Season with vinaigrette that has been mixed with chopped cilantro leaves. Top with red onion.
  2. Combine all the elements.
