Black bean salad
Delicious black bean salad recipe with zesty flavors and fresh ingredients. Perfect balance of colors, textures, and seasonings in every bite.
Ingredients:
- 16-ounce can black beans, rinsed, drained and dried
- 1/2 red bell pepper, finely chopped
- 1/2 yellow bell pepper, finely chopped
- 1/2 cup steamed haricots verts, chopped into 1-inch lengths
- Mustard Vinaigrette, recipe follows, mixed with cilantro
- Thin slices of red onion
- 1 teaspoon or so Dijon mustard
- 4 tablespoons vegetable oil
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper
Instructions:
- Mix together beans, bell peppers, and haricots verts. Season with vinaigrette that has been mixed with chopped cilantro leaves. Top with red onion.
