Black bean, quinoa and citrus salad

Ingredients:
- 2 cans (15 oz) black beans
- 1/2 red onion, minced
- 2 grapefruits
- 1 red pepper, chopped
- 1 cup cooked corn
- 1 cup quinoa, uncooked
- 1 large avocado
- 1 bunch cilantro
- 3 limes, juiced
- 2 teaspoons cumin
- .25 teaspoons sea salt
Instructions:
- Prepare 1 cup of quinoa following the instructions on the package
- Wash the beans, corn, and dice the vegetables and toppings.
- Combine the prepared quinoa with lime juice, cumin, and salt. Spread it at the base of the dish.
- Add layers of onions, bell peppers, oranges, kidney beans, sweetcorn, avocado, and coriander. Chill in the refrigerator.
- Enjoy with pita chips, on a bed of greens, or by itself!
