Black bean, mango & kale wheat berry salad
Delicious blend of hearty wheat berries with nutrient-rich kale, zesty mango, and protein-packed black beans. A burst of flavors in every bite!
Ingredients:
- 2 cups hard red winter-wheat berries, (see Tip)
- 7 cups cold water
- 1 teaspoon salt
Instructions:
- Inspect the wheat berries thoroughly, removing any debris. Wash them thoroughly under cold water. Transfer to a large sturdy saucepan. Pour in water and add salt.
- Heat over high flame until boiling, then lower the heat, cover, and simmer gently for an hour, stirring occasionally. Drain and rinse the wheat berries. Serve hot right away or follow the instructions for preparing in advance.
