Black bean and corn salad

Ingredients:
- 4 ears corn, husks removed
- 2 tablespoons olive oil
- 1 cup diced red bell pepper
- 3/4 cup diced red onion
- 1/4 cup cider vinegar
- 1 (15-ounce) can black beans, rinsed and drained
- 1 teaspoon minced garlic
- 1/2 cup snow peas, julienned
- 1 teaspoon sea salt
- 1 teaspoon freshly cracked black pepper
Instructions:
- Heat up the grill to medium heat.
- Cook the corn on the grill until slightly charred, for approximately 2 minutes, while regularly turning. Move the corn to a cutting board and cut off the kernels using a knife with a serrated edge. Keep them aside.
- In a medium-sized frying pan over medium-high heat, pour in the olive oil followed by the red bell pepper and the red onion. Cook for about 3 minutes, then include the vinegar, beans, and corn. Cook for an additional 2 minutes. Mix in the garlic and the snow peas and cook for another minute. Take it off the heat and transfer it to a serving bowl. Season with salt and pepper. Can be served warm or chilled.
