Biwaz (parsley and onion salad)

Ingredients:

  • 1 large white onion
  • 6 cups loosely packed fresh flat-leaf parsley leaves (from 1 to 2 bunches) (about 90g), roughly chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoon ground sumac
  • ½ teaspoon kosher salt

Instructions:

  1. Trim off both ends of the onion and discard them. Peel the onion, wash it, and then dry it by patting it with paper towels to reduce its strong flavor. Divide the onion in half lengthwise, and slice each half widthwise into approximately 1/4-inch slices; cut the slices to be 1 to 1 1/2 inches in length.
  2. Mix the sliced onion in a medium bowl to ensure they are all separated. Put in parsley, and mix well. Include lemon juice, oil, sumac, and salt; mix thoroughly. Serve right away.
