Bitter green and egg salad

Ingredients:

  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon brown sugar
  • 1 to 2 garlic cloves, thinly sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 heads bitter greens (such as frisee, radicchio, endive, and dandelion), torn into bite-size pieces
  • 2 green onions, thinly sliced
  • 3 hard-cooked eggs, peeled and chopped*
  • 1 tablespoon capers

Instructions:

  1. Combine the oil, vinegar, sugar, minced garlic, salt, and pepper in a spacious bowl. Mix in the leafy greens and chopped green onions until everything is evenly coated. Sprinkle eggs and capers on top.
  2. *To achieve ideal hard-boiled eggs, place the eggs in a sizeable pot and cover them with cold water. Bring the water to a near boil, then turn off the heat. Cover the pot and allow the eggs to sit for 15 minutes. Afterward, rinse the eggs under cold water and peel them.
