Big island greens with papaya dressing

Indulge in the flavors of the Big Island with crisp greens topped off with a tangy papaya dressing. Experience a burst of tropical goodness in every bite.

Ingredients:

  • 1 fresh lime
  • 1 papaya, peeled, sliced, and seeds removed and reserved
  • 1 teaspoon Dijon mustard
  • 1/4 cup rice wine vinegar
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup extra-virgin olive oil
  • 6 cups mixed fresh greens, soaked in salt water to remove grit, rinsed and dried in a salad spinner
  • 2 tablespoons chopped fresh cilantro leaves

Instructions:

  1. Prepare the dressing by heating the lime in a small bowl to release its essential oils. Let it cool down before using. While the blender is running, slowly add the papaya, papaya seeds, Dijon mustard, vinegar, salt, pepper, and juice from the heated lime. To keep the seeds inside the lime, squeeze it with the cut side facing your palm. Continue blending and pour in the olive oil in a steady stream. Keep in mind that the edible papaya seeds add a mustard-like flavor to the dressing but have a slightly coarse texture. If the texture is too rough for your liking, strain the dressing before using.
  2. Mix the greens and cilantro with some of the dressing until they are coated well. Serve the remaining dressing on the side.
