Big green lentil salad

Ingredients:
- cups green lentils, rinsed
- tsp. kosher salt, divided, plus more
- cups plain Greek yogurt
- garlic cloves, finely chopped
- tsp. ground turmeric
- Freshly ground black pepper
- cup unsalted, roasted sunflower seeds
- Tbsp. plus 1½ tsp. fresh lemon juice
- Tbsp. extra-virgin olive oil, plus more for drizzling
- ripe avocado, cut into cubes
- cup baby arugula
- cup basil leaves, torn if large
Instructions:
- Simmer lentils in a large saucepan with salted water until they are soft but still hold their shape, for about 20-30 minutes. Once cooked, drain the lentils, rinse them with cold water, and drain well again.
- In a small bowl, combine yogurt, minced garlic, turmeric, ¼ teaspoon of salt, and a generous amount of pepper; set the mixture aside for later use.
- In a large bowl, gently mix together cooked lentils, sunflower seeds, lemon juice, 3 tablespoons of oil, and the remaining ½ teaspoon of salt. Carefully fold in diced avocado, arugula, and basil leaves.
- On a serving platter, spread the prepared yogurt sauce and top it with the lentil mixture. Finish by drizzling some oil over the dish.
