Ingredients:
- 1/4 cup shelled raw unsalted pistachios
- 1/4 cup chopped raw unsalted hazelnuts
- 2 tablespoons light brown sugar
- 1 teaspoon kosher salt
- 1/2 teaspoon pure vanilla extract
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- 2 tablespoons pure maple syrup
- 1 tablespoon Dijon mustard
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 cups baby arugula
- 2 cups baby kale
- 2 cups baby spinach
- 2 cups quartered and sliced radicchio
- 3 mandarin oranges, peeled and segmented
- 1/2 cup pomegranate seeds
- 1/2 cup dried cranberries
- 1/2 cup fresh blueberries
- 1/4 cup freshly grated Parmesan
Instructions:
- To make the candied nuts: Heat a nonstick skillet over medium-high heat and toast the pistachios and hazelnuts until they become aromatic, which should take about 4 to 5 minutes. Next, add brown sugar, salt, vanilla, and 1 tablespoon of water directly into the skillet with the nuts. Stir well to ensure the nuts are coated evenly. Let it cook until the sugar dissolves completely, approximately 1 minute more. Transfer the nuts to a baking sheet lined with parchment paper and let them cool for about 12 to 15 minutes.
- To prepare the dressing: In a mason jar, combine olive oil, vinegar, maple syrup, mustard, salt, and pepper. Tightly close the lid and shake the jar vigorously to mix all the ingredients together. Set it aside.
- For assembling the salad: Arrange arugula, kale, and spinach on a large round platter, making sure to leave some space in the middle of the platter to create a wreath-like appearance. Place radicchio on top of the greens. Add mandarin segments over the salad greens. Sprinkle pomegranate seeds, cranberries, blueberries, and the cooled candied nuts over the salad.
- To finish, sprinkle Parmesan cheese on top to resemble snow. Give the dressing another shake and pour it into a serving bowl. Position the bowl in the center of the platter and serve.
