Bibb salad with basil-buttermilk dressing

Ingredients:
- Nonstick cooking spray
- 2 cups buttermilk
- 2 large eggs, beaten
- 1 teaspoon pure vanilla extract
- 4 tablespoons (1/2 stick) melted unsalted butter, divided
- 2 ¼ cups all-purpose flour, spooned and leveled
- ¼ cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
Instructions:
- Preheat your oven to 425ºF. Cover an 11-by-17-inch rimmed baking sheet with parchment paper, spray nonstick cooking spray on the parchment and sides of the pan, and then set it aside.
- Combine buttermilk, eggs, vanilla, and 2 tablespoons of melted butter in a medium bowl by whisking until mixed.
- In a different large bowl, mix together flour, sugar, baking powder, baking soda, and salt using a whisk. Add the milk-egg mixture and stir until just mixed. (Avoid overmixing.)
- Transfer the batter into the prepared baking sheet, spread it into an even layer using a spatula.
- Bake until the pancake turns lightly golden and bounces back in the center when pressed, typically 11 to 13 minutes. Take it out of the oven and preheat the broiler to high.
- Spread the remaining 2 tablespoons of melted butter over the pancake. Broil until it becomes golden brown, usually 1 to 2 minutes, rotating halfway through.
- Slice into 12 pieces and serve while warm.
