Best-of-summer grilled radicchio and pear salad
Enjoy a delightful combination of smoky grilled radicchio and juicy pear in this refreshing summer salad. Perfect blend of flavors that will tantalize your taste buds!
Ingredients:
- 1 head Radicchio, quartered lengthwise
- 1 medium Fennel bulb
- 1 Bartlett Pear, sliced
- 6 leaves Red Lettuce
- 12 blackberries
- 1/4 cup pistachios
- 1/4 cup extra virgin olive oil
- 1/4 teaspoon Dijon mustard
- 1 sprig fresh thyme
- 1 sprig fresh rosemary
- 1 sprig fresh oregano
- 1/4 cup crumbled Gorgonzola (optional)
- 1/2 lime, juiced
- salt & pepper to taste
Instructions:
- Heat up a gas grill to medium-high heat or prepare a charcoal grill with medium heat. Pour olive oil over radicchio cut into quarters and place on the grill; cover and cook until the outer leaves get slightly charred, approximately two minutes on each side.
- Slice fennel and pear thinly and place on top of red lettuce leaves. Include the grilled radicchio, berries, and nuts in the arrangement.
- In a small bowl (or use a food processor), combine 1/4 cup of olive oil, lime juice, Dijon mustard, salt, and pepper. Drizzle the mixture over the salad. Optionally, sprinkle some crumbled Gorgonzola on top. Enjoy the dish.
