Best-of-summer grilled radicchio and pear salad

Enjoy a delightful combination of smoky grilled radicchio and juicy pear in this refreshing summer salad. Perfect blend of flavors that will tantalize your taste buds!

Ingredients:

  • 1 head Radicchio, quartered lengthwise
  • 1 medium Fennel bulb
  • 1 Bartlett Pear, sliced
  • 6 leaves Red Lettuce
  • 12 blackberries
  • 1/4 cup pistachios
  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon Dijon mustard
  • 1 sprig fresh thyme
  • 1 sprig fresh rosemary
  • 1 sprig fresh oregano
  • 1/4 cup crumbled Gorgonzola (optional)
  • 1/2 lime, juiced
  • salt & pepper to taste

Instructions:

  1. Heat up a gas grill to medium-high heat or prepare a charcoal grill with medium heat. Pour olive oil over radicchio cut into quarters and place on the grill; cover and cook until the outer leaves get slightly charred, approximately two minutes on each side.
  2. Slice fennel and pear thinly and place on top of red lettuce leaves. Include the grilled radicchio, berries, and nuts in the arrangement.
  3. In a small bowl (or use a food processor), combine 1/4 cup of olive oil, lime juice, Dijon mustard, salt, and pepper. Drizzle the mixture over the salad. Optionally, sprinkle some crumbled Gorgonzola on top. Enjoy the dish.
