Beluga lentil salad

Ingredients:
- 1 cup black lentils (170g)
- 2 cardamom pods
- One 1-inch piece of fresh ginger, peeled and thinly sliced, plus 2 tablespoons minced ginger
- 5 tablespoons unsalted butter
- 1 onion cut into 1/2-inch dice
- 2 garlic cloves, minced
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garam masala
- 2 quarts vegetable stock or low-sodium broth
- 1 cup canned crushed tomatoes
- Salt
Instructions:
- Place the lentils, cardamom, and sliced ginger in a saucepan and add enough water to cover them by 1 inch. Bring to a boil and cook on high heat until the lentils begin to soften, which should take around 10 minutes. Drain the lentils and transfer them to a bowl, removing the cardamom and ginger before doing so.
- In the same saucepan, melt 3 tablespoons of butter. Add the onion, garlic, and minced ginger, and cook over medium heat until they are soft, about 8 minutes. Then, lower the heat, and mix in the coriander, cumin, cayenne, and garam masala. Cook while stirring until the mixture becomes aromatic, around 4 minutes.
- Next, pour in the stock, tomatoes, and cooked lentils. Bring the mixture to a boil over high heat. Reduce the heat and let it simmer until the lentils are fully cooked, and the soup has thickened, approximately 1 hour. Stir in the remaining 2 tablespoons of butter and season with salt. Serve the soup in bowls.
