Beet salad with yogurt & spices

Delight in the vibrant flavors of a refreshing beet salad, perfectly balanced with creamy yogurt and aromatic spices. Enjoy a burst of freshness in every bite.

Ingredients:

  • 2 cups Beets - boiled until just soft, cooled, peeled, & grated
  • 1 tablespoon Ghee
  • 1/2 teaspoon Cumin Seeds
  • 1/2 teaspoon Black Mustard Seeds
  • 1 pinch Asafoetida (Hing)
  • 4 Curry Leaves, fresh or dried
  • 1/2 teaspoon Turmeric Powder
  • 2 tablespoons Fresh Cilantro, chopped
  • 3/4 cup Plain Yogurt
  • 1/8 teaspoon Salt (or to taste)
  • Freshly ground Black Pepper to taste

Instructions:

  1. Warm the clarified butter in a small frying pan over medium heat and put in the cumin seeds, mustard seeds, and asafetida. Stir until the seeds start popping, around 1-2 minutes.
  2. Include the curry leaves, turmeric, and coriander. Combine and remove the frying pan from the stove.
  3. Mix the beets and yogurt in a bowl.
  4. Incorporate the cooled spices into the beet & yogurt combination.
  5. Add salt and black pepper for seasoning. Mix well and plate.
