Beet salad with feta & dill

Indulge in the harmonious blend of earthy beets, tangy feta, and aromatic dill with this delectable salad bursting with layers of flavor. A true culinary delight!

Ingredients:

  • 910g medium beets, scrubbed
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • ⅓ cup crumbled feta cheese
  • 2 tablespoons chopped fresh dill

Instructions:

  1. Heat the oven to 200 °C.
  2. Individually cover each beet with foil and put them on a baking sheet with edges. Cook until soft, for about 1 to 1 1/4 hours. Once they have cooled down, remove the skin and chop them into small 1/2-inch pieces.
  3. In a large bowl, mix together oil, vinegar, salt, and pepper. Then, add the beets and feta cheese, and mix everything well. Serve with a sprinkle of dill.
