Beet salad with feta & dill

Ingredients:
- 910g medium beets, scrubbed
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- ⅓ cup crumbled feta cheese
- 2 tablespoons chopped fresh dill
Instructions:
- Heat the oven to 200 °C.
- Individually cover each beet with foil and put them on a baking sheet with edges. Cook until soft, for about 1 to 1 1/4 hours. Once they have cooled down, remove the skin and chop them into small 1/2-inch pieces.
- In a large bowl, mix together oil, vinegar, salt, and pepper. Then, add the beets and feta cheese, and mix everything well. Serve with a sprinkle of dill.
