Beet salad

Ingredients:

  • 3 tablespoon olive oil
  • 1 tablespoon honey
  • 2 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoon red-wine vinegar
  • salt and pepper, to taste
  • 1 small red onion, halved and sliced thinly
  • 2 eight-ounce packages steamed and peeled beets, such as love beets, chopped
  • chopped basil, for garnish

Instructions:

  1. Combine olive oil, honey, mustard, lemon juice, and vinegar in a bowl. Season with salt and pepper according to your preference. Mix in the onion and beets and let it marinate for 30-60 minutes. Sprinkle with basil right before serving.
