Beet & lettuce salad with green onion vinaigrette
Fresh beet and lettuce salad with tangy green onion vinaigrette to tantalize your taste buds. Perfect balance of sweet and savory flavors.
Ingredients:
- 230g lettuce, roughly chopped
- 1 large beet, roasted and sliced as thinly as possible
- 1/2 cup pumpkin seeds
- 60g goat cheese, crumbled
- 1/4 cup chopped green onions
- 1 tablespoon lemon juice
- 1 teaspoon maple syrup
- 1/4 teaspoon cayenne pepper
- 1/4 cup olive oil
- Salt and pepper, to taste
Instructions:
- Mix together diced lettuce, beet strips, pumpkin seeds and crumbled goat cheese in a spacious bowl.
- Blend spring onion, freshly squeezed lemon juice, maple syrup, and cayenne pepper in a blender or food processor; continue to blend while pouring in olive oil gradually until the mixture thickens and resembles a vinaigrette. Season with salt and pepper as desired.
- Pour the prepared dressing over the salad bowl; mix well; adjust the taste by adding more dressing until it reaches your desired flavor. We utilized approximately half of the dressing (and are storing the remainder in the refrigerator for future use).
