Beany briny salad

Ingredients:
- 2 large cloves garlic, smashed and peeled
- Juice of 1/2 lemon
- 1 15-ounce can navy beans, drained and rinsed
- 6 tablespoons extra-virgin olive oil, plus more for topping
- 1/4 teaspoon smoked paprika
- Kosher salt and freshly ground pepper
- Baby greens, giardiniera, olives, crumbled feta cheese and flaky salt, for topping
- Sourdough bread, for serving
Instructions:
- Place the minced garlic in a small bowl and pour the lemon juice over it. Allow it to rest for 5 minutes to reduce the intensity of the raw garlic taste.
- In the food processor, mix the navy beans, olive oil, smoked paprika, a generous pinch of salt, some twists of pepper, and the prepared garlic and lemon juice. Process until the mixture is extremely creamy, for about 2 to 3 minutes. Sample the dip and modify the seasonings to your preference.
- Transfer the dip into a serving bowl and garnish with preferred toppings; drizzle with a bit of olive oil. Present with slices of sourdough bread.
