Bbq halloumi & corn salad
Delight your taste buds with this flavorful BBQ halloumi and corn salad. A perfect combination of smoky, grilled halloumi cheese and sweet corn, tossed in a refreshing salad dressing. Enjoy a burst of savory and sweet flavors in every bite.
Ingredients:
- 1 red onion, chopped
- 1 large avocado, peeled, stoned, halved and chopped
- 200g cherry tomatoes, halved
- 2 limes, juiced
- 2 tbsp extra virgin olive oil, plus extra for brushing
- 2 sweetcorn cobs, any husks removed
- pinch of smoked paprika
- 200g block of halloumi, cut into cubes
- small bunch of coriander, roughly chopped
Instructions:
- Transfer the diced onion, avocado, and cherry tomatoes to a large serving dish. Pour the lime juice and oil over the mixture, sprinkle with a bit of salt, mix well, and set aside.
- Start the barbecue or heat a grill pan over high heat. Coat the corn with a bit of oil, then sprinkle with paprika and some salt. String the halloumi cheese onto metal skewers and grill next to the corn until the cheese turns golden and the corn has slight char marks.
- Let the corn cool down a bit, then place each cob vertically on a cutting board and carefully cut off the kernels. Add the corn and halloumi to the salad, sprinkle with coriander, mix gently, and serve immediately while warm. It can also be enjoyed at room temperature.
