Bayley's original west indies salad

Ingredients:

  • 1 medium onion, finely chopped
  • 450g lump crab meat
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ cup vegetable oil
  • ¼ cup cider vinegar
  • ½ cup cold water
  • Bibb lettuce leaves

Instructions:

  1. Place half of the diced onion at the base of a spacious mixing bowl. Add the crab meat, then layer the rest of the diced onion on top. Season with salt and pepper.
  2. Drizzle oil, vinegar, and water sequentially over the crab meat mixture. Ensure not to mix. Cover and refrigerate for 2 to 12 hours.
  3. Gently mix and plate on individual serving dishes lined with lettuce.
