Bayley's original west indies salad

Ingredients:
- 1 medium onion, finely chopped
- 450g lump crab meat
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ cup vegetable oil
- ¼ cup cider vinegar
- ½ cup cold water
- Bibb lettuce leaves
Instructions:
- Place half of the diced onion at the base of a spacious mixing bowl. Add the crab meat, then layer the rest of the diced onion on top. Season with salt and pepper.
- Drizzle oil, vinegar, and water sequentially over the crab meat mixture. Ensure not to mix. Cover and refrigerate for 2 to 12 hours.
