Bavarian potato salad

Ingredients:
- 910g yellow or gold fingerling potatoes
- ½ - ¾ cup chicken stock, as needed, divided
- 2 tablespoons white wine vinegar
- 2 teaspoons whole-grain mustard
- ½ cup finely chopped red onion
- ¼ cup finely chopped cornichons (about 8 cornichons)
- 2 tablespoons finely chopped fresh dill
- 2 tablespoons extra-virgin olive oil
- ¾ teaspoon fine sea salt, plus more to taste
- ¼ teaspoon ground black pepper, plusmore to taste
Instructions:
- Start by putting the potatoes in a large saucepan and make sure they are covered with cold water by at least 1 1/2 inches. Bring it to a boil over medium-high heat. Then, lower the heat to medium and simmer while stirring occasionally until the potatoes are soft, which should take about 14 minutes. Once done, drain the water and let the potatoes cool down a bit for about 5 to 10 minutes before peeling them with a small, sharp knife. Cut them into rounds that are about 1/2-inch thick and place them in a shallow bowl.
- Take a small microwave-safe bowl and add 1/2 cup of chicken stock to it. Heat in the microwave until it's hot, which should take around 30 seconds. Mix in the vinegar and mustard, ensuring everything is well combined. Pour this mixture over the potatoes in the bowl, gently tossing to coat them. Let it sit at room temperature, stirring occasionally, for about 1 hour.
- If the potatoes have soaked up most of the stock mixture after 1 hour, mix in the remaining 1/4 cup of chicken stock. Add the onion, cornichons, dill, oil, salt, and pepper to the bowl with the potatoes, tossing gently to combine everything. Allow it to sit at room temperature, stirring occasionally, for at least 2 hours or you can leave it for up to 4 hours. Adjust the seasoning with more salt and pepper to suit your taste.
