Basmati rice salad

Ingredients:
- 2 cups basmati rice, rinsed until water runs clear and drained well
- 3 tablespoons vegetable oil
- 1 large onion, thinly sliced
- 2 cloves garlic, chopped
- 1 cinnamon stick
- 1 bay leaf
- 2 cloves
- 1 cardamom pod
- 1/2 teaspoon cumin
- 3 1/2 cups boiling water
- 1/2 cup golden raisins
- Salt and freshly ground pepper
- 1/2 cup cashews
Instructions:
- Warm the oil in a medium saucepan on medium-high heat, put in the onions and garlic and sauté until they become tender. Next, sprinkle in the cinnamon, bay leaf, cloves, cardamom, and cumin, and stir for about 1 minute. Pour in the boiling water and add the raisins, then season with salt and pepper according to your preference. Bring the mixture to a boil, gently stir once, cover the saucepan, lower the heat, and let it simmer for 12 to 15 minutes. Take the saucepan off the heat and allow it to rest for 10 minutes. Uncover the pot, fluff the mixture with a fork, mix in the cashews, and adjust the seasoning with more salt and pepper if needed. Serve the dish at room temperature.
