Basil and tomato pasta salad

Delight in the flavors of ripe tomatoes and fragrant basil in this refreshing pasta salad. Perfect harmony of colors and tastes in every bite!

Ingredients:

  • ¼ cup balsamic vinegar plus 2 tablespoons, divided
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground pepper
  • 4 cups grape tomatoes (about 540g), halved
  • ½ cup thinly sliced white onion
  • ⅓ cup chopped fresh basil or parsley
  • 450g cooked whole-wheat bow-tie pasta

Instructions:

  1. Combine 1/4 cup vinegar, oil, salt, and pepper in a large bowl by whisking them together. Mix in tomatoes, onion, and basil (or parsley) until well combined. Chill in the refrigerator, stirring occasionally, for a minimum of 1 hour. Mix in pasta and the remaining 2 tablespoons vinegar and toss thoroughly.
