Basic cream of vegetable soup

Ingredients:
- 3 tablespoons unsalted butter
- 1 cup chopped onion
- 1 potato, peeled and diced
- 2 cups water or chicken stock
- 1 1/2 cups steamed vegetables, i.e. carrots, broccoli, spinach, or peas
- Salt and pepper
- 1/2 cup heavy cream
Instructions:
- Heat butter in a large saucepan over medium heat until melted. Cook chopped onion until soft without browning. Add diced potato and liquid, then bring to a boil. Let it simmer until potato is soft. Add your choice of steamed vegetables and simmer again. Blend the soup in a blender in batches and return it to the saucepan. If you prefer a chunkier texture, keep 1 cup of vegetables unblended. Season with salt and pepper, and stir in heavy cream. Serve the warm soup with French bread and a side salad.
