Barley greek salad

Ingredients:
- 1 cup pearled barley
- Kosher salt
- 2 cups yellow and red cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/2 cup pitted kalamata olives
- 3 tablespoons chopped fresh mint
- 1 small red bell pepper, seeded, ribs removed and diced
- 1 shallot, minced
- 3 tablespoons red wine vinegar
- 2 tablespoons extra-virgin olive oil
- Freshly ground black pepper
Instructions:
- Mix the barley, 3 cups of water, and a pinch of salt in a medium saucepan. Bring it to a boil, then lower the heat and simmer until the barley becomes tender, which should take around 45 minutes. Drain the barley using a colander and allow it to cool.
- Combine the tomatoes, feta cheese, olives, fresh mint, bell pepper, and shallots in a mixing bowl. Then, add the cooled barley to the mixture.
- In a separate small bowl, whisk together the red wine vinegar and olive oil. Season it with salt and pepper. Pour the dressing over the salad and mix it well. Cover the bowl with plastic wrap and refrigerate until you're ready to serve.
