Barefoot carrot salad

Ingredients:
- 1/3 cup golden raisins
- 450g carrots
- 2 tablespoons freshly squeezed lemon juice
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1/3 cup diced fresh pineapple
Instructions:
- Put the raisins in a small bowl and pour boiling water over them. Let them soak for 5 minutes, then strain out the water.
- Attach the grating blade to a food processor. Halve the carrots and feed them into the processor so they are positioned horizontally. Grate the carrots in small portions. Transfer the grated carrots to a medium bowl, pour in the lemon juice, and mix well.
- To make the dressing, blend the sour cream, mayonnaise, sugar, and salt. Drizzle the dressing over the carrots, then mix in the pineapple and soaked raisins. Combine everything well before serving.
