Banana-mint salad
Delight in the refreshing fusion of flavors with this banana-mint salad. A tantalizing blend of sweetness and freshness awaits in every bite.
Ingredients:
- 1 1/2 tablespoons lime juice
- 1 tablespoon honey, increase if you want it sweeter
- 1 tablespoon torn fresh mint, plus more for garnish
- 6 medium bananas, sliced
- 4 handfuls toasted nuts, crushed (optional)
Instructions:
- Mix together lime juice, honey, and fresh mint in a small dish. Place sliced bananas in a big serving bowl, pour the dressing over them, and delicately mix. Garnish with additional mint leaves and serve.
- If you wish: chopped, toasted nuts! They provide a great texture. My preference is pecans, but almonds are a good alternative. Toast the nuts in a pan, allow them to cool, crush them using a Ziploc bag or your hands, and sprinkle them on top of the salad. (Alternatively, top a few banana slices on toast spread with nut butter.)
