Balsamic green beans salad

Ingredients:

  • 100 grams green beans
  • 3 tablespoons olive oil or pumpkin seed oil
  • 1.5 tablespoons balsamic vinegar
  • salt, pepper to taste
  • 1 clove garlic, grated or sliced
  • 1/2 cup feta cheese
  • 1/2 cup cherry tomatoes

Instructions:

  1. Clean and pat dry the green beans, then trim both ends of each bean, discarding any fibrous strings.
  2. Boil a pot of water, season with salt, and add the green beans. Cook for around 15 minutes or until they reach desired tenderness that allows a fork to pierce through easily. Drain and let them cool.
  3. Prepare the balsamic vinaigrette. Mix together minced garlic, salt, pepper, olive oil, and balsamic vinegar until well combined. Drizzle the dressing over the cooled beans and toss to coat. Sprinkle crumbled feta cheese and halved cherry tomatoes on top of the salad before serving.
