Baked potato salad
Indulge in the irresistible flavors of our baked potato salad! This culinary masterpiece is a delightful blend of tender potatoes, crispy bacon, creamy mayonnaise, and zesty herbs, creating a perfect harmony of taste and texture.
Ingredients:
- 910g red potatoes, skin on, washed
- 3/4 cup sour cream
- 1 1/4 cups mayonnaise
- 1/2 cup white vinegar
- 1 teaspoon black pepper, freshly cracked
- 1/2 teaspoon salt
- 6 pieces bacon, cooked and chopped
- 4 green onions, sliced thin
Instructions:
- Boil the potatoes in a large pot of salted water until they are just tender when pierced with a fork. Drain the potatoes and let them cool down. Once they are cool enough to handle, cut them into 1-inch cubes.
- While the potatoes are cooking and cooling, cook the bacon in a large nonstick pan until crispy. Place the cooked bacon on a paper towel-lined plate to remove excess grease. Set aside 3 tablespoons of the bacon fat in the pan.
- Heat up the reserved bacon fat in the pan and sauté the potatoes until they turn a light golden brown. Place the potatoes on a paper towel-lined plate to cool, and sprinkle them with a bit of salt.
- Mix together sour cream, mayonnaise, white vinegar, salt, and pepper in a small bowl. Chop the bacon and green onions. Combine the potatoes with the dressing, adjust the seasoning as needed. Chill in the refrigerator for 1 hour, then garnish with bacon and green onions before serving.
